Indian cooking produces a wide variety of food that needs to be stored carefully — cooked sabzi, raw meat, dairy, fresh vegetables, and fermented foods like dahi all have different storage requirements. Where Not to Store Indian Food

  • Hot cooked food: Never put hot food directly into the fridge — it raises the interior temperature and puts other food at risk. Cool to room temperature (within 1 hour) before refrigerating.
