Indian cooking produces a wide variety of food that needs to be stored carefully — cooked sabzi, raw meat, dairy, fresh vegetables, and fermented foods like dahi all have different storage requirements. Where Not to Store Indian Food
- Door shelves: The warmest part of the fridge — do not store milk, eggs, or cooked meat here. Use door shelves for condiments, juices, and drinks only.
- Near air vents: Items placed directly in front of the rear vents will freeze — damaging delicate vegetables and curd.
- Hot cooked food: Never put hot food directly into the fridge — it raises the interior temperature and puts other food at risk. Cool to room temperature (within 1 hour) before refrigerating.
Should You Store Dahi in the Fridge?
Yes. Once set, dahi should be refrigerated at 3–4°C to slow further fermentation. At higher temperatures it becomes sour quickly. In winter, if you set your fridge to 5°C or above, dahi may not stay fresh for more than 3 days.
